Arisu fôret noir Sparkling Pine

An expression of our secluded Black Forest terroir, crafted through semi wild vinification of hand-foraged Douglas fir, larch, and pine. Fermented with forest honey and wild yeasts, then aged for months, it bridges the citric vibrancy of young needles with the tannic structure of ancient wood and organic Yakushima black tea. This is the expansive aroma of the forest, distilled into a deeply fermented, musky, and sophisticated sparkling.

    Botanical Base: Douglas Fir, Larch, and Pine (Needles & Wood).
    Growth Habit: Southern Black Forest (UNESCO biosphere reserve)
    Tea Component: Organic Yakushima Black Tea (Yabukita lineage).
    Water Source: Natural mountain spring water, Black Forest, Germany.
    Fermentation: Cold vinification with wild yeast & forest honey (alcohol-free).
    Maturation: Multi-month aging in a secluded cellar environment.
    Effervescence: Natural delicate fine-bead carbonation.
    Structure: High tannin, high mineral, citric acidity.
    Service Temperature: 12°C – 14°C (50°F – 54°F) to allow the wood notes to breathe.
